Great text, Yulia! I stopped visiting natural wine fairs because some organisers, producers and promoters became unbearably dogmatic. And then I just became less tolerant to faults, I think ;) And I never say no to a glass of a good Barolo, even though there are no 100% natural producers in the region!
Wait, what about Rivetto, Canonica, Principiano? If you open the gates just a touch where it's well farmed, indigenous yeast fermented, unfined, unfiltered, unmanipulated and has minimal SO2 added, there are quite a few that work in this artisanal way.
Artisanal for sure but none of them will ever call themselves « natural » wine producers I guess. And they will not hesitate to intervene if a wine goes deviant
